Can someone please tell me what a pizza should actually look like? Has food fusion gone too far? Am I being too much of a purest to refuse a Margherita pizza with a Thai twist and a Vietnamese twang? Don’t get me wrong, I love the aromatic flavours of Thai food, or the French influence in my Vietnamese banh mi but not on my pizza!! Are we clouding history? The Margherita pizza adorned with basil, mozzarella & tomato: green, white and red – the colours of the Italian flag. Originally made for Margherita of Savoy by the Italian pizza maker Raffaele Esposito in 1889. I’m hearing you, coriander is green, lemongrass is arguably white- really though? Like when you over mix paint colours in a palette – morphing into an obnoxious brown sludge.
